Mother in Law's mood swings are driving me crazy

My mother in law is driving me crazy with her mood swings. My husband and I have gotten to the point where we don't want to even have contact with her. She is obsessed with my dogs and their care. She accuses us of mistreating them which is totally untrue. She is hurting my husband and I don't know how much more I can take before I snap!! Please help because I will hurt her feelings if this continues!
