The principle men at our wedding are wearing matching outfits but these are fairly laid back (i.e. dark trousers and white, collarless open-neck shirts). As the shirts will be unfastened at the neck, I would really like them all to wear the same type of necklace – a leather cord with a few beads on it. Also, my partner, his dad and one of the ushers wear a single ear-ring whilst the best man and other usher wear two and I would really like them all to wear a silver hoop.

My partner says he is fine doing this but is uncomfortable asking his friends to co-ordinate their jewellery with his. Do you think my quest for everything to be co-ordinated is unreasonable or should I go with the flow on this one?

well its common to give the assistants a gift for helping at your wedding. what you could do is maybe buy them the matching jewelry and give it them the night before,.
solves the what gift problem, and also means they all match how you like.
