Szechwuan Chicken and Noodle Stirfry

This is a really simple fresh dish and works great with beef, pork or fresh prawns to replace the chicken.

Don't be afraid to add extra chilli to your stir fry if you like it hot!

Serves 4
200g Chinese Szechwan Spice Mix
4 boneless, skinless chicken breasts,sliced
1 onion, roughly choppe
1 red pepper, sliced
1 courgette, cut into matchsticks
200g egg noodles, cooked
1 tablespoon oil

1. Heat the oil in a large wok or frying pan and fry the chicken and onion for about 4-5 minutes until golden.

2. Add remaining vegetables and stir fry for 3-4 minutes.

3. Sir in the Chinese Szechwan Spice Mix and stir fry for 1-2 minutes.

4. Add the noodles and heat through.
